There is one thing that I can make that all six of us will eat without complaining and it’s really one of the easiest things to make. Plus, spinach is in it which makes it a sneaky way to make them eat greens!
I don’t follow measurements so I’ll do my best.
Buy or make a open pie crust (one layer). I buy it because pie crust does not like me.
In a bowl mix six eggs, milk, salt and pepper.
Strain and wring out one box of frozen spinach and mix it into the egg mixture.
Chop up one to two cups of ham depending on what you like and mix that into the mixture.
Add one cup shredded cheddar.
Pour the egg mixture in to pie shell and cover top with thinly sliced tomatoes. Sprinkle another 1/2 cup on top.
Bake at 375 for roughly 45 minutes. Keep an eye on it and when it looks solid check it with a clean knife like you would check a cake. If the knife comes out clean, it’s done baking.
Let it sit for 15 minutes before cutting or it will still have a little too much fluid from all the additives.
(If when mixing the egg mixture, it looks like you need more egg, add one or two more. I usually use six and mine come out more solid. It’s a matter of taste really.)
